Coronation Tarts

The story behind the recipe:

These were made to celebrate the Coronation in 1911. Similar to Bakewell Tarts but ground rice replaced the more expensive ground almonds.

My grandmother often made them and the recipe was in her old black notebook that I still have.


Ingredients:

Pastry lined with strawberry jam
3 oz ground rice
2 oz sugar
1 oz butter
1 egg
1/2 teaspoon baking powder


How to make it:

Beat butter and sugar to cream, then add ground rice and eggs by degrees.
Sometimes half ground rice and half ground almonds were used instead of all ground rice.
