Faluda Pudding

The story behind the recipe:

This is one of my favourite desserts that my grandmother used to make when I was just a little girl. It’s typically made on special occasions and always brings back fond memories of my childhood. With a subtle essence of rose and that pretty pink colour that never seems to fail to put a smile on my face.


Ingredients:

3 cups milk (preferably whole milk)

1 1/2 teaspoons agar agar powder

1/4 cup evaporated milk

1/2 cup sugar (adjust according to taste)

1 teaspoon vanilla essence

1/8 teaspoon cardamom powder

1 teaspoon rose water

2-3 drops red food colouring

Chopped nuts for garnish


How to make it:

1. Place milk in a pot and turn heat to medium. Keep stirring.

2. After 2 minutes, add agar agar powder (dissolve agar agar powder in a separate bowl using 2 tablespoons or more of the milk already in the pot, then add to pot).

3. Add evaporated milk, sugar, vanilla essence, cardamom and rose water. Mix well.

4. Let the milk cook on medium low heat for 7-8 minutes—keep stirring.

5. Once the milk starts to steam, add food coloring—keep stirring.

6. Let it cook again for 3 minutes—make sure to keep stirring.

7. Turn off heat and ladle mixture into desired bowls or ramekins.

8. Let it sit at room temperature for 30 minutes. After 30 minutes, garnish with chopped nuts and place in the fridge to chill. Enjoy!
