Grandpa’s Mussels a la Jimmy

The story behind the recipe:

My grandpa would always fish for clams and mussels at his local beach and after he would cook the shellfish and make a delicious meal for my family. Its important to me to cook his recipes because it keeps his memory alive and makes me think of him.


Ingredients:

Extra virgin olive oil
1 onion, chopped
1 head of fennel, chopped
2 celery ribs, chopped
2 roma tomatoes, chopped
3 cloves of garlic, chopped
2 pounds of mussels, cleaned and de-bearded
1 can of your favorite beer
Handful of parlsey
1 loaf of bread sliced and toasted or grilled


How to make it:

Sauté all vegetables in some olive oil for 5 minutes on medium heat. Add mussels and beer bring to boil and then lower heat to medium and cook mussels for 8 minutes or until mussels are opened. Toss in parsley and fennel fronds. Put mussels in bowl and enjoy with toasted bread.
