Ricotta Balls

Ingredients:

1 tub of ricotta (14 oz)
1 handful of grated Parmesan cheese (or 1 cup)
1 tablespoon chopped parsley
1 egg 
1 teaspoon salt
1 cup breadcrumbs
Vegetable oil (for frying)


How to make it:

Mix all ingredients but the breadcrumbs together and make small balls or logs, then roll the balls in the breadcrumbs.

Fry in veggie oil until golden brown.

Good with some tomato sauce, or drop and cook for 20 mins into some broth (without rolling in breadcrumbs).
